Ingredients
2 cups of chopped roasted cauliflower
2-3 leeks chopped and roasted (1-1 1/2 cups)
2 cloves of garlic, roasted
olive/avocado oil for drizzling
4 tbsp of garlic hummus
pinch of himalayan salt
fresh marjoram/thyme
3 cups of vegetable broth
2 tbsp olive/avocado oil
squeeze of lime
splash of white wine or champagne vinegar.
Directions
- Roast garlic in oil.
- Add leeks and cauliflower.
- Stir till golden brown
- Add vegetable broth
- Bring to a boil
- Add hummus, salt, herbs, wine, oil and vinegar. Serve hot.
