Ingredients
Assorted citrus, about 2.5 – 3lbs. I used
3 navel oranges
3 cara cara oranges
2 minneola oranges
3 mandarin oranges
1 blood orange
1/2 fennel bulb, thinly sliced
1 avocado, slices
1/2 shallot, thinly sliced
1/3 cup of olive/avocado/coconut oil
2 tbsp of champagne vinegar
1 tbsp of maple syrup or honey
Garnish with Salt and Pepper to taste and 1/4 cup of mint leaves
Directions:
- Combine citrus in a bowl
- Combine oil, vinegar, honey and salt and pepper.
- Whisk and toss into the salad.
