Apple and Kohlrabi Salad

Ingredients

2 small Kohlrabi (about 1 pound) ideally purple, cut into 1/4″ wide matchsticks

1 large Honeycrisp apple (about 1/2 pound), cored and cut into 1/4″ wide matchsticks

2 tbsp of nutritional yeast

1/4 cup fresh tarragon leaves

3 tbsp toasted sunflower seeds

Lemon zest, to taste

1/2 tbsp of avocado/olive or coconut oil

1/2 tbsp lemon juice

Pink Himalayan salt and pepper to taste

Directions:

Combine and serve
