Roasted Cauliflower and Leek Soup

Ingredients

2 cups of chopped roasted cauliflower

2-3 leeks chopped and roasted (1-1 1/2 cups)

2 cloves of garlic, roasted

olive/avocado oil for drizzling

4 tbsp of garlic hummus

pinch of himalayan salt

fresh marjoram/thyme

3 cups of vegetable broth

2 tbsp olive/avocado oil

squeeze of lime

splash of white wine or champagne vinegar.

Directions

  1.  Roast garlic in oil.
  2. Add leeks and cauliflower.
  3. Stir till golden brown
  4. Add vegetable broth
  5. Bring to a boil
  6. Add hummus, salt, herbs, wine, oil and vinegar.  Serve hot.
