Chickpeas and Kale Salad

Ingredients

3 cups of chickpeas or 2 cans, drained and rinsed

4 green onions, thinly sliced

1 lb of kale, spinach and chard braised in garlic

3 tbsp of fresh basil

2 tbsp of snipped fresh chives

Salt and Pepper to taste

3 tbsp of olive, avocado/coconut oil

2 tbsp of red wine/coconut amigos/blueberry vinegar

1 1/2 tbsp of honey/maple syrup

3 garlic cloves, minced

1 lime, juiced and tested

Directions:

  1. Combine salad into a bowl
  2. Mix the dressing by adding the oil, vinegar, honey, garlic and lime.
  3. Toss into the salad
